Happy Summer All!

Since it’s the first week of Summer I thought I’d start it off with a fun recipe for summer camping. My husband always gets sneaky and adds the ingredients to make this taco salad to my shopping list just before camping. He’s always begging me to make it when we’re on the road and it’s always a big hit!

This one has a few steps, however, it’s easy enough to make while camping as long as you remember to bring what you need!
Many of these steps can even be done prior to leaving home- however, I wouldn’t mix any ingredients more than a day prior to eating, just to keep things fresh.

(This depends on how many hungry boys you have, but I think it makes a LOT!)

Ingredients Needed:
1 lb. ground beef
1 package taco seasoning
1 cup chopped lettuce
1 cup chopped tomato
1 cup shredded cheddar cheese
1 finely chopped red onion
1 (15 oz) can chili beans (hot to add some kick!)
1 bottle California style French dressing or regular French dressing
1 bag Doritos

Optional for a little bite:
Salsa
Jalapeños

Directions:
Brown hamburger meat and add taco seasoning following the package directions.
Mix ground beef and all ingredients except Doritos and lettuce until you’re ready to serve. (This keeps it fresh!)
Refrigerate if you’d like it cold, or serve it up!
I like this one a little bit chilled, and then I add the Doritos and lettuce just before serving.

I also take a photo of it before I mix it, it’s just prettier. Mix before serving though to get all the ingredients mixed up well.

As always, we include recipes good for camp. Chop veggies and put in containers before leaving, and brown meat before leaving as well to make this one easy-peasy on the road!
